Alright all you savvy readers…It’s Your Turn! Here is part of an e-mail that I received from Nikki who is looking for some ideas for lunches:
I try to pack my husband nutritious lunches every day so he doesn’t feel like he has to go out to eat. The problem is that I’ve been having a hard time coming up with ideas of what to pack. Other than leftovers and turkey sandwiches, I guess I have just been having trouble thinking outside of the box. I want my husband to look forward to eating what I packed him for the day and was wondering if you or your readers might be able to help me with some ideas. Thanks a bunch!

I used to pack my husband’s lunch and would still do it if he would eat it! Often times, his job just doesn’t let him eat at a regular lunch time. Sometimes he will take a lunch only to have someone invite him out, on their tab of course, or one of the companies he buys from will be offering a free lunch. When this happens, his lunch is wasted because he won’t eat a soggy sandwich or brown salad. I began looking at other options for lunch and have found that stocking up on the Yakisobi Noodles that are often FREE at King Soopers and Strawberry Yoplait yogurt makes him happy. He can grab it and go and if he gets a better offer, nothing is wasted, and this makes me happy. He also keeps a stash of protein bars, granola bars, and chex mix (all FREE) in his car for emergency snacking.

My husbands loves wraps. I use whatever meat I have left from dinner (ham, chicken, pork, or beef) and shred or chunk it into cubes. Make a great spread (he likes my creme cheese herb misture but I mix it up and either add mayo with add-ins or vinegar based salad dressings) Add shredded lettuce or leftover slaw depending on the meat choice. If I have tomatoes on hand I seed and chop them for additional add-ins. I also like to put scallions or minced onion or thin sliced bell peppers and olives. The possibilities are endless. Go Italian, Mexican, Greek or just plain old American. I also bake ahead. I make muffins either banana, bran, pumpkin and blueberry. I usually have a container with an assortment in my freezer. (This also helps when guests come over for coffee!) He also likes a small container of some kind of salad or fruit. He is spoiled because now he wants me to cut up all his fruit….;)

I make banana bread in a mini loaf pan and wrap thin individually with plastic wrap. Then I freeze them and they unthaw by lunch. He also likes leftovers so I try to make extra for dinner.

How about burritos. I make burritos with egg, cheese, and salsa.

I rotate my husband through three different weeks of stuff, for variety. One week is chili. You need freezer space for this, but about every 3 months I make two different chilis, a double batch of each, and freeze in larger containers. Sunday night I thaw one container of each kind and make some rice and package it all up into individual containers. You could just do one kind, but variety is nice. Another week I make something we call “lasagna casserole”, which is broken up lasagna noodles (or small pasta) mixed with ground beef, marinara and cheese. I make that fresh for the week. The third week I buy lunch meat and he makes his own sandwich. This way, I only have to do major cooking for his lunch every 3 months (the chilis), minor cooking every third week (the pasta) and he does the rest. We always have a bag of baby carrots on hand so he takes a container of those, plus an apple and he’s good to go.
