The weather is beautiful here in Denver this week and I officially cannot wait for spring and all the loveliness that comes along with it…including berry sales! 🙂
This year I’m on a mission to put all the awesome berry deals that we are about to see to good use and to help you do the same. In the spirit of the beautiful weather outside right now (sorry if it’s not as nice in your neck of the woods ;)) I want to share this delicious Raspberry Bar recipe with you! These are so fun to throw together using homemade or store-bought Raspberry Preserves. Since we are still waiting on on the berry sales to start, I went ahead and used store bought in these bars and they turned out so good – just the perfect thing to put us in the spring mood!
Raspberry Bars
Dough Ingredients
1 C sugar
1 tsp baking powder
3 C flour
1 C shortening
1 egg
pinch of salt
pinch of cinnamon
Fruit Filling Ingredients
1 jar of Raspberry Preserves
Directions
1. Preheat oven to 375 degrees.
2. Spray a 9×13 pan with a non-spray cooking spray (I used a smaller one to get a thicker bar).
3. Combine the sugar, flour, baking powder, salt, cinnamon and mix.
4. Add the shortening and egg.
5. Hand mix until crumbly.
6. Divide the dough into half.
7. Take the first half of dough and pat it into the bottom of the prepared pan.
8. Spread the preserve mixture onto the top of the first half of dough.
9. Gently add the other half of the dough as a crumble to the top.
10. Bake at the 375 degrees for 35-45 minutes or until the top is slightly brown.
Using a regular pan is just fine for this recipe, but if you want to help make serving them a little easier I love this perfect portion pan. It’s also awesome for brownies! 🙂
