My family devoured them in no time!This easy Christmas cookie recipe is something you can make exclusively with items you likely already have on hand. Anytime I don’t have to fight the crowds at the store this time of year, I am all about it!

Festive Peanut Butter and Chocolate Sandwich Cookies
Ingredients:
Ritz Crackers
Creamy peanut Butter
Powdered Sugar
Chocolate for melting- I used a tray of chocolate candy coating, but white chocolate or chocolate chips/melts would also work well
Directions:
Combine equal parts creamy peanut butter and powdered sugar. Mix well. Spread some of the mixture on a Ritz cracker. Repeat until all of the peanut butter mixture is gone. (To give you a frame of reference, I used ½ cup of the peanut butter and ½ cup of powdered sugar. This made 48 sandwich cookies.)
Top each cracker with the peanut butter mixture on it with another Ritz cracker to make sandwiches. Place the “sandwiches” on a parchment paper-lined baking sheet and freeze for 30 minutes to harden. Remove the sandwich cookies from the freezer. Either in a double boiler on the stove or in the microwave, warm up the chocolate.
Submerge each sandwich cookie in the melted chocolate until coated. Using small tongs, remove the covered cookie and place back on the parchment paper until hardened. Before the chocolate hardens, add festive sprinkles to the top.
