For today’s 30 Day Shred update I want to share with you all a homemade energy bar recipe that I recently fell in love with! This recipe was inspired by this Food Network recipe created by Ellie Krieger.
These bars seriously blow any granola bar or energy bar that I’ve ever had out of the water. They are super yummy and so filling! Be sure to let me know what you think if you decide to make them.
Ingredients:
1-1/4 cups Oats
1/4 cup Cranberries
1/2 cup Rasins
1/2 cup Dried Apricots
1/2 cup Nuts (your choice!)
1/2 cup Pitted Dried Dates
1/2 cup Raw Shelled Sunflower Seeds
1/2 cup Wheat Germ
1/2 cup Powdered Dry Milk
1/2 teaspoon Cinnamon
1/4 cup whole-wheat flour
1/3 cup Pure Maple Syrup
2 Large Eggs
Directions
Preheat your oven to 350 degrees F and greese a 9×9 or 8×8 baking dish. Place all of the ingredients except for the syrup and eggs in a food processor or blender. Pulse until all ingredients are finely chopped. Add the syrup and both eggs and continue to pulse until they are mixed in. Transfer the mixture into your baking dish and bake for 20 minutes.
A Few Tips
I tried to mix these ingredients in my Magic Bullet (since my food processor was broken) and it wasn’t able to chop through everything, so I slipt it up into batches in my blender which also had a little bit of a hard time but made it through. With that said, you might want to skip this recipe if you do not have a strong blender or food processor.
This is a great recipe to play around with. If you have a favorite dried fruit feel free to substitute it for another one.
Make sure to keep a close eye on the bars while they are cooking. They are not nearly as good if they are overcooked.

Since I know energy bars can be diet busters, I’m wondering how many servings this makes?

Elizabeth~ I cut these into really small squares when I make them, so I say 15-20. 😉
