The Thin Mint Trifles recipe that I shared with you earlier this week was such a hit that I thought you might enjoy another Girl Scout Cookie Recipe: Samoas Brownies! If you’ve got a spare box of Samoas that hasn’t been devoured yet, this is a fun way to reinvent them into something even more delicious!
Ingredients
1 cup butter, softened
2 cups sugar
4 eggs
1½ tsp. vanilla
½ cup cocoa
1⅓ cups flour
½ tsp. salt
15 Samoa cookies
Directions
1. Using a food processor or a ziplock bag and rolling stick crumble the Samoa cookies to very small pieces.
2. In separate bowl, cream butter and sugar together.
3. Now add eggs and vanilla and blend well.
4. Add the salt, cocoa and flour and stir to combine. Don’t over-beat.
5. Fold 3/4 of the Samoa cookies into the batter.
6. Pour batter into a greased 9×13 pan.
7. Bake at 350 F for 20-25 minutes.
8. Let cool completely and then top with remaining crushed cookies.

We also like to add a drizzle of caramel sauce on top also to make it extra gooey!
