As you all know, I’m a huge believer that meal planning is a must when it comes to having a well rounded, healthy grocery budget. If your life is anything like mine, healthy dishes that can be made without a lot of fuss are a requirement to make meal planning successful.
One of my most favorite foods in the world is Hillshire Farm’s Turkey Pepper Jack Sausage. If you have not tried it yet, I highly suggest it! It has always amazed me how much flavor they have packed into it and since I’m a fan of simple dishes in the kitchen, it is perfect for a quick meal. Sometimes I’ll even eat it on it’s own and it has saved me from eating out on several occasions.
Since I am such a big fan of their turkey sausage, I had to say yes when I was offered the opportunity to come up with a recipe using Hillshire’s Beef Polska Kielbasa! The good news is that the kielbasa is also delicious on its own, so I didn’t have to do much to come up with a very yummy dish. Here is the one that I created:
Beef Kielbasa Spinach Salad
Ingredients
Olive Oil
1/2 tbsp Butter
5oz Fresh Cleaned Baby Spinach
2 Cloves Fresh Minced Garlic
Hillshire Farm Rope Beef Polska Kielbasa (thinly sliced)
1/2 tsp Cajun Seasoning
Pepper
Salt
Green Apple (thinly sliced)
Directions
1. Heat small amount of olive oil and butter in saute pan.
2. Toss spinach and garlic in oil/butter and cover to cook.
3. In separate pan, cook kielbasa along with cajun seasoning and salt/pepper to taste.
4. Transfer cooked spinach to serving plate and top with kielbasa and green apple slices.
Tips
-If you do not own a salad spinner, you can fill a large bowl with cool water, rinse the spinach, remove from the water, place it in a plastic strainer, put a paper towel on top and ask one of your little ones to go outside and spin around with it a few times. Or you can be like me and have fun being a human salad spinner yourself. 😉
-Don’t use too much olive oil and make sure to keep a close eye on it as it is cooking. You don’t want it to over cook.
-Keep in mind that the spinach will cook down a lot. One 5oz package will be good for one large serving or two small servings.
