We are big Red Velvet fans in our house, so when my daughter recently asked me to make something for a school bake sale, I started looking around for ideas and found Red Velvet Sandwich Cookies. Needless to say we just had to try them out!
The main ingredient in this recipe is actually a Red Velvet Cake Mix, so they are quite simple to make. I had never made cookies using a cake mix before, so I wasn’t exactly sure how they would turn out. I was so pleasantly surprised at how well it worked out, and now I’m really interested in finding out what other types of cookies I might be able to make using a cake mix!
I used a Duncan Hines Recipe but made a few alterations. This particular recipe only calls for 1 egg but I used 2 eggs, which made the dough a bit moister and easier to work with. Because I’m also considered “high altitude” I added 1/4c. of flour to the mix. As you will notice, the recipe also instructs you to roll the dough into a log and refrigerate. I didn’t find this to be necessary, as I just made sure to allow the eggs to reach close to room temperature and the butter to cool before adding them to the mix. I then gently rolled the dough into balls using about a 1TBS of dough and placed them on the cookie sheet for baking. It was not necessary to flatten them before hand, as they just baked up wonderfully all on their own. You will want them to remain quite soft, so I only allowed them to bake for about 10 minutes, but did make sure to let them rest on the cookie sheet for just a few minutes before transferring them to the cooking rack. This way they kept there shaped well, and insured that they didn’t fall apart.
Once they cooled I placed a generous spoon full of cream cheese frosting in the middle of one cookie and gently pressed another cookie on top to form a sandwich. Super simple and amazing delicious! I was so glad that we were donating most of these to the school bake sale or I would have eaten entirely too many! They really are amazing, and would make an awesome little treat to share with friends and neighbors for the holidays. The festive red coloring lends itself perfectly to this, and I think if you placed a few in a cute cellophane bag with a homemade tag tied around the top, your recipients would be quite impressed as well. 🙂

Don’t follow the box recipe – just use the recipe combining the mix, eggs, vanilla, and butter. I just made some and they came out great.

Just made these and I’m pretty excited about it. I read multiple versions of this recipe bc I was obsessing 🙂 and here’s what I did:
I used two eggs at room temp, 1/3 c melted butter (cooled), two TBSP flour, a tsp vanilla, the cake mix, and then added a TBSP veg oil bc the dough was pretty thick. I didn’t chill the dough at all but used a TBSP to scoop balls. I got 24 beautiful round cookies with just the perfect amount of crackles on top.Thanks for this recipe — I deem it a keeper!

There are a few modifications, but if you follow the link above to the Duncan Hines Recipe you should be able to see which ingredients are required. Personally, I did use a few alterations which can be found above as well. I’m sure you are going to enjoy these, they are totally delicious!

I got all the stuff to make the Duncan Hines Recipe for this for a cookie swap at school and then actually read all the directions when i got home and started freaking out about the leaving in refrigerator over night and such. It’s funny you posted this, because I was actually thinking of making a Duncan Hines Red Velvet Cake w/cream cheese frosting tonight, but now maybe I’ll have to try out the cookie version instead! Do you recall about how many cookie sandwiches this recipe made?

If I recall correctly, it made about 21 sandwiches (42 cookies). So depending on exactly what size you make them, you should probably get anywhere between 18-24 sandwiches. Happy baking!
